Mycotoxins are toxic secondary metabolites produced by molds, mostly belonging to the three genera Aspergillus, Penicillium and Fusarium. These fungal toxins are chemically diverse accounting for their different biological effects. There are hundreds of mycotoxins known, but few have been extensively researched. The most notorious and extensively investigated mycotoxins are aflatoxin B1 (AFB1), ochratoxin A (OTA), fumonisin B1 (FB1), zearalenon (ZEN), deoxynivalenol (DON), and T2 toxin.
